Michael is an executive chef responsible for coordinating the menu and recipe development for UCLA Dining Services. He maintains a comprehensive tracking system for all recipes and ensures that menu information is compliant with university standards. He manages relationships with contracted purchasing organizations, analyzes quotes, and performs best value analysis. With his efforts in expanding authentic Pan-Asian menu selections for the past 10 years, UCLA Dining has developed hundreds of recipes representing 10 different countries in Asian cuisine. He is honored to be part of the #1 college dining program and looking forward to more future developments. He studied business administration at the University of South Florida and started his Japanese Kaiseki apprenticeship while in college. He has previously managed a large quick-service restaurant chain and worked in the airline catering industry.
